Barb's Veal or Chicken Scallopini

Method

Dredge meat in flour, and sear in a hot pan with the butter for about 30 seconds per side, (do not over cook,) high heat sears in the juices, over cooking results in dry, chewy meat.

Place meat on a plate, melt 1/4 cube butter in the pan you've been using and add the mushrooms, scallions (sliced thin,) and about 1/2 cup of white wine.  Cook until mushrooms are tender, about 2 minutes.  Thicken with a little corn starch, (about 1 tsp,) mixed with water.  Pour over meat and serve with sliced lemon and/or wild rice.

Ingredients

6 pcs veal or chicken (if chicken is used beat it very flat, scallopini style.)
1/2 cube butter
1 cup flour
2 lemons
1 bunch scallions
12 mushrooms, sliced thin
white whine
corn starch
