When you
first looked at the title of this book, you may have asked yourself,” Can
carbohydrates really kill? If they do, why have I had no problem with them?”
After you finish reading this book, you will find out why carbohydrates are
dangerous to not only our health, but also to the health of future
generations.
You probably wonder if this is just
another book offering a low carbohydrate diet for weight loss. There are so
many dieting books already in the bookstores. There is no need of another one.
Obviously, people are tired of hearing about low-carbohydrate diets and weight
loss. The editor of the Virginian Pilot even titled his editorial article of
the January 2, 2005 issue, “Carb-counting: a fad whose time has run.” I was
very concerned about the impacts on its readers by such an erroneous comment. I
responded with a letter to the editor below:
“Do not treat carb-counting a fad.
(01/02/2005 Editorial: Carb-counting: a fad whose time has run.) The dietary
recommendation with emphasis on a high-carb and low-fat diet for the last
several decades deserves a serious second look. Despite the blame on the
sedentary lifestyle and overeating, the high-carb and low-fat diet is likely
responsible for the increase of cases of cardiovascular and other catastrophic
disorders………….”
I have been a medical doctor for
37 years. I
have watched the increase in health problems brought on by obesity.
Unfortunately, I failed to pay attention to my own increasing weight, because I
thought I was eating a healthy, balanced diet. I did not begin to take care of
my cardiovascular system until June 9, 2002, when I accidentally found out my
blood pressure was dangerously high. I did not want to count pills for the rest
of my life so I decided to use my own body for research. I was going to see if
I could alter this terrible situation and save my life, without pills.. In the
meantime, I began to delve into medical journals to identify the real culprit
responsible for my problems. As of this writing, I have reviewed more than
1,200 articles and I am still counting. Although I did not necessarily read all
articles word for word, I tried to understand and take note of their findings.
After observing improvement in my
health, I
continued to record my progress. I believe that it is the time for me to share
my findings about the dark side of sweets or carbohydrates. I hope I can help
you improve your health.
I
begin with a chapter titled Nutrition and Health, in which I give some
background in food intake and the makeup of the human body. In hope of
providing a clearer understanding in explanations to follow, I have included a
list of glossary with graphs in the first chapter. The glossary list should
help you catch some of the terms when you read on.
I also want to discuss ways in which
weight gain
and obesity can impact your health. You will quickly see that the body works as
a unit, with each and every part affected by diet. If you can cut extra weight
with a good diet, you can become healthy again, and live longer without facing
so many illnesses. I am going to show you why today’s popular dietary
recommendations based on a food pyramid are responsible for the increase in the
numbers of people suffering ailments related to weight gain.
Next, I will describe a six-year
period in my
own life during which I improved my health through acting on findings from my
experiments. I detail some of the changes in my physical condition and health
to illustrate how I struggled during these years but refused to give up my hope
of reclaiming my good health. Perhaps, in reading about my experiences, you
will gain insight for facing your own similar hurdles.
I
shall also share with you my notes about the findings of 135, out of a reading
list of 1,163 articles. For your reference, the reading list is posted online

articles included
in this book discuss different health problems, for which carbohydrates are
directly or indirectly responsible. With them, you will see a mountain of
evidence showing that our thinking about carbohydrates, up until this time, has
been terribly wrong.
