Peanut Butter Cookies

  • ½ cup peanut butter
  • ½ cup sugar
  • ½ cup packed brown sugar
  • ½ cup butter, softened
  • ½ cup vegetable shortening
  • 1 egg
  • 1¼ cups all-purpose flour
  • ¼ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • Heat oven to 375º F.
  • In large mixing bowl combine peanut butter, sugars, butter, shortening and egg.
  • Beat at medium speed with electric mixer until light and fluffy.
  • Add flour, baking soda and salt. Beat at low speed until thoroughly mixed.
  • Shape dough into 1 inch balls.
  • Place balls 2 inches apart on ungreased cooky sheets.
  • Flatten balls with a fork in a crisscross pattern.
  • Bake for 8 to 10 minutes, or until light golden brown.
  • Allow to cool for a few minutes before removing from the pan.
  • Makes 4 dozen cookies.
  • Store in air tight container at room temperature.

Serve them while still slightly warm, or completely cool, with a glass of milk.
