Peanut Butter Cookies
- ½ cup peanut butter
- ½ cup sugar
- ½ cup packed brown sugar
- ½ cup butter, softened
- ½ cup vegetable shortening
- 1 egg
- 1¼ cups all-purpose flour
- ¼ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- Heat oven to 375º F.
- In large mixing bowl combine peanut butter, sugars, butter, shortening and egg.
- Beat at medium speed with electric mixer until light and fluffy.
- Add flour, baking soda and salt. Beat at low speed until thoroughly mixed.
- Shape dough into 1 inch balls.
- Place balls 2 inches apart on ungreased cooky sheets.
- Flatten balls with a fork in a crisscross pattern.
- Bake for 8 to 10 minutes, or until light golden brown.
- Allow to cool for a few minutes before removing from the pan.
- Makes 4 dozen cookies.
- Store in air tight container at room temperature.

Serve them while still slightly warm, or completely cool, with a glass of milk.
