Aunt Carol's Chocolate Chip Cookies

"Here is my recipe for chocolate chip cookies."

  • 1/2 cup Smart Balance buttery spread
  • 1/2 cup (1 stick) butter softened
  • 3/4 cup baker's sugar (finer than regular sugar)
  • 3/4 cup brown sugar (usually the dark brown)
  • 2 large eggs
  • 1 tsp real vanilla extract (not flavoring);
  • a couple of drops of real peppermint extract (more if using peppermint flavoring) is optional.
  • Blend the above ingredients until creamy and well mixed.
  • Add 1 tsp baking soda and 1/2 tsp salt.
  • Mix well.
  • Add 1 cup Bob's Red Mill whole wheat flour and mix.
  • Add 1 1/4 cup organic white flour and mix.
  • I sometimes add an additional 1/4 cup of the white flour because I like the cookie dough stiffer.
  • Then I add a heaping cup of Ghirardelli semi-sweet chocolate chips and 1/2 cup (or more) chopped nuts.
  • I usually chill the dough before baking the cookies.
  • I bake at 375 degrees for 11 minutes or so.

Serve cookies while the chocolate chips are still warm and soft, if possible, with ice cream or a tall glass of milk
