Special Pot Roast

makes 8 to 10 servings

12 to 14-inch Dutch oven
3 to 5 pound beef roast
3 tablespoons vegetable oil
2 cans (15 ounces each) cajun-style stewed tomatoes
2 green peppers chopped in big pieces
1 to 2 large onions chopped in big pieces
1 to 2 cans flat beer
3 to 4 pounds new potatoes, scrubbed
1 bunch fresh green beans
salt and pepper

In Dutch oven sear roast in oil until all sides are browned.

Add the cans of cajun tomatoes, green pepper and onion. Pour in can(s) of beer and cover roast and cook for 2 hours.

Spoon some of the tomato mixture into a large bowl and toss with the new potatoes. Add the potatoes to the oven and cook for another 40 minutes.

Add in the green beans. Simmer another 20 minutes until tender crisp.

Note: Check periodically and add more liquid if needed. Let liquid reduce by half at least.

Note: Even though the alcohol completely cooks off, this is not an appropriate recipe for most scouting functions.
