Sweet Potato Gratin

makes 3 to 6 servings

8 or 10-inch Dutch oven
1 to 3 yams or sweet potatoes
1 can (5 ounces) evaporated milk
1/2 teaspoon vanilla extract
1 to 2 tablespoons brown sugar, to taste
1/4 to 1/2 teaspoon ground cinnamon, to taste

Peel and slice yams 1/8" thick. Layer yam slices (overlapping) in prepared Dutch oven, covering the bottom as evenly as possible.

Sprinkle with brown sugar and cinnamon.

Repeat yam and spice layers until yams are used up.

Combine evaporated milk and vanilla, pour over yams until it half covers the yams.

Cover and bake at 350 degrees F for 1 hour.

Remove from coals, remove lid, and allow to cool slightly before serving.

Note: For a simpler variation, omit brown sugar and substitue a can of sweetened condenced milk for the evaporated milk.

Variation: Peel, core, and slice several tart baking apples, and alternate slices of yams and apples.

A nice, not too sweet version.
