About the Proprietors.....

"......Once upon time, one guy asked me :"Where are you from?". I answered: "Czechoslovakia." "Oh, ok, from Eastern Europe.  "He said - "Of course just like Kentucky is eastern state in United states", I said.

 I was born and grown in Czechoslovakia, little country with western culture in middle of Europe.  Same western time like Germany and same Eastern time like Austria. In  industrial city with 380,000 of population plus vicinity and suburbs.  In the country which sovereignty was accepted by Pope of Rome  since 1212, country with nation, who went through hundreds of little wars and battlefields and several big wars.  From all those nations who were fighting on battlefields in the middle of Europe, for example: Germans, Swedish, French, Russians, Arabians, Romanians, etc, etc, from all of those - this little nation was learning how to fight, how to build, how to make art, etc. etc, and also how to cook.

   So I am the one who also, after high school, went to culinary school learn cooking for 3 years,  with specialization of European cuisine and after that for one year school for hotel management. First job I took in International hotel where I learn all basics about accommodations, cooking in the main daily kitchen, in the desserts kitchen, in the night life bar kitchen, appetizers and salads kitchen and ballroom kitchen.  In the hotel was 11 restaurants,150 permanent employees plus wait stuff and kids like me, from different schools and courses. Then cooking and managing in several different restaurants until I met my wife. 

In 1994 we decided to open our own restaurant and name was chosen as Flamenco.  After several successful years we decided to move to USA.  Why? Because America, since I was child, was and is the symbol of freedom and honesty.  Why Eastern Shore? Because I like warm weather I like to be in the middle of continent and I like water.  Actually I like west coast better for nature and San Francisco for architecture, but I like anchorage under my feet.  I don't like shaking glasses in the shelf. So we struck roots here in beautiful town of Onancock on the Eastern Shore Virginia...."
