Bread, Rolls, Biscuits and Buns

Grandma's Biscuits
 
2 cups Self-rising Flour 
1/4 cup Crisco
3/4 cup Buttermilk
 
1.  Preheat oven to 500 degrees (depending on your oven & the area you live in).
2.  Measure and sift 2 cups of self-rising flour into a mixing bowl.
3.  Add 1/4 cup Crisco to the bowl.
4.  Cut Crisco into flour with fork & then crumble with fingers until the particles of shortening are the size of grains of rice.
5.  Add Buttermilk & stir until the mixture is thoroughly moistened. If the mixture seems too dry, add more buttermilk.
6.  Form the dough in hands & turn out onto a floured surface.
7.  Form the dough into a ball & knead until it is smooth, turning it while kneading.  Kneading is very important.
8  Using a floured rolling pin, roll the dough out to a 1/2 inch thickness.
9.  Cut the biscuits using a floured cutter.
10. Arrange the biscuits on a baking pan so that each biscuit is slightly touching the one next to it.
11. Place the pan in the preheated oven & bake at 500 degrees for 10 to 14 minutes or until done.

2 Hour Nut Roll
Nut Rolls are a holiday favorite in Pittsburgh. You can usually find them in the local bakeries around Easter and Christmas time. Or if you are really lucky, someone will give you a homemade one...You can also fill them with prepared apricot or poppyseed filling.
 
INGREDIENTS
Dough
1 package active dry yeast
1/2 cup warm milk
1/2 pound (2 sticks) butter
3 tablespoons sugar
1 teaspoon salt
1 cup sour cream
3 eggs + 1 for egg wash
6 cups flour
 
Filling
2 cups ground walnuts
1 cup sugar
 
Dissolve yeast in warm milk. Cream butter, salt and sugar. Add sour cream, eggs and yeast mixture. Gradually add flour , mixing well until all flour is used and dough leaves sides of bowl. Divide into 5 parts and let rise for 1 hour.  Roll each dough ball into an 11.5" X 13" rectangle. Spread with nut filling* (recipe follows)  and roll up jelly-roll style. Place on generously greased baking sheet and let rise again for 35-40 minutes. Brush each roll with egg wash and bake at 350 degrees for 35-40 minutes until browned.  Makes 5 nut rolls.
 
Filling
Amount of filling is up to individual.
To prepare:
Combine 2 Cups ground walnuts to 1 cup sugar-thin to spreading consistancy with warm milk or water.
