I've got a lot to say about BBQ'n.

 

   I'll start with my opinion, of my experience level. I am no pit master, I do own an inexpensive BBQ pit. Also, I 'm not too good with a gas grill and don't care for these contraptions. You can make some good food with a gas grill, but not in my backyard.

 

  My BBQ'n device is a Webber kettle. The webber almost doesn’t qualify as a true BBQ in the purest sense, since a BBQ should have the firebox set off to the side. (Photo below) But since I usually do not cook directly over the flame (this is called grilling) I'll just say I'm BBQ'n, Got it?   ;)

 

Now the best advise I can give any one, is to take that can of lighter fluid to your city's hazardous waste disposal area, DO NOT put it on your coals. Most people do not like their food to taste like kerosene. Go to your local hardware store and pick up a “chimney” put a wad of paper in the bottom and some hardwood briquettes in the top and you ready to go.

Credit where credit is due:
 
   I light the Q and cook the meat., but that is only about %10 of what goes into a meal. Shelli marinates it, prepares the side dishes, the table and makes the whole thing special!

   One man's trash is anothers treasure. These pieces of fish are Albacore (tuna) belly. Many people disguard this piece but I love it, it is loaded with FAT, YUMMY fish fat!

   Notice the way this peice if flakeing? If your fish is mushy through it inthe trash!

  On the left is the chimney I mentioned earlier. This nifty device will save your BBQ from that nasty smoldering kerosene taste.

This is what a real BBQ looks like.

 

   The square piece in the back is where a real wood fire is kept burning at a low temperature. The cylinder with the two doors is the cooking chamber, the upright box is the smoking chamber and on the front there is a grill. Isn't she beautiful?
