Safron

 

Saffron threads, are  the dried stigmas of the saffron Crocus (Sativus Linneaus). Each flower contains three stigmas. which must be picked from each flower by hand.


 

Saffron is used both for its bright orange-yellow color and for the intense flavor and aroma it provides.  Fortunately very little is required for recipes because of this potency.

The stigma of the crocus is used in dyes and as a flavoring.  It is the most expensive of all spices (one pound of safron takes over 70,000 plants).
