Indian Waldorf Salad
3 cups chopped unpeeled Granny Smith
apples
1/2 cup chopped celery
1/2 cup golden raisins
1/4 cup minced red onion
1/4 cup light mayonnaise
2 teaspoons lime juice
1/2 teaspoon curry powder
1/2 teaspoon ground ginger
1/4 cup chopped raw or toasted almonds
Toss the apples, celery, raisins and
onion in a bowl. Combine the mayonnaise, lime juice, curry powder and ginger
in a small bowl and mix well. Fold the mayonnaise mixture into the apple mixture. Chill, tightly covered, for 30 minutes to several hours. Stir in the almonds just before serving.
