Summer Favorites

Texas Baked Beans
 
Ingredients
1/2 lb        ground beef
4 slices     bacon,diced
1/2 cup     chooped onion
32 oz.       pork ad beans undrained
16 oz.       kidney beans, rinsed and drained
1/2 cup     white sugar
1/2 cup     packed brown sugar
1/4 cup     catsup
1/4 cup     barbecue sauce
2 tbs.       molasses
2 tbs.       dry mustard
1/2 tsp.    chili powder, to tast
 
Directions:
1. Preheat oven to 350
2. Brown beef, bacon and onion in a large skillet or dutch oven over medium heat.
3. Add beans and remaining ingredients, stirring to combine. Pour into two (1 1/2-quart each) buttered baking dishes.
4. Bake uncovered for 45 minutes to 1 hour or until thickened (do not stir).
5. Alternatively, place in a buttered crock pot and heat on low for about 4 hours, uncover during the last hour of cooking if you like your beans thick.

 
French Onion Burgers
 
Ingredients:
1 lb          ground beef
1/4 oz.     onion soup mix
1 tbs.       olive oil
1 med.     onion, thinly sliced
4 slices    swiss cheese
 
Directions:
1. Preheat grill
2. In a small bowl,, combine beef and onion soup mix. Shape into four patties.
3. Grill patties about 5 minutes per side or until cooked through and internal   temperature reaches 170.
4. Meanwhile, heat oil in a medium nonstick skillet over medium-high heat. Cook onions until softened, about 5 minutes.
5. Before removing patties from grill, top with onions and a slice of cheese.
