RECIPE

Carob Chip Cookies
 
1 cup maple syrup

1 teaspoon vanilla

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup canola oil

2 1/2 cups whole wheat pastry flour

1 teaspoon baking soda

1 cup sweetened carob chips
Preheat oven to 350.

Lightly oil baking sheets.

Blend maple syrup, oil and vanilla until smooth.

In large bowl whisk flour, baking powder, baking soda and salt until well combined.

Add maple syrup mixture and combine (Do not over-mix).

Fold in carob chips.

Drop by rounded tablespoons onto cookie sheets and bake until slightly brown.

Cool for 2 minutes, remove from cookie sheet and finish cooling on wire rack.
