| Chilled Corn Salad | |
| Corn kernels from one large cob cooked
drained and cooled 1 small onion, chopped ½ cup chopped green pepper 2 Tablespoons minced fresh parsley 2 Tablespoons cider vinegar 1 Tablespoon vegetable oil ¼ teaspoon salt ¼ teaspoon pepper Lettuce leaves |
Combine all ingredients except lettuce leaves.
Cover and chill at least 4 hours. Serve on lettuce leaves. Serves two. |
