RECIPE

Rich Dark Gingerbread
 
1-1/2 cups whole wheat flour

1 cup unbleached white flour

11/2 teaspoons baking soda

1 teaspoon ginger

1 teaspoon cinnamon

1/2 teaspoon ground cloves

1/2 teaspoon salt (optional)

1/2 cup butter or margarine

1/2 cup raw sugar or Sucanat

1 egg, well beaten

1 cup molasses

1 cup very hot water
Sift together the dry ingredients, except sugar.

Cream the butter and sugar.

Add the egg and then the molasses.

Gradually add the dry ingredients to the creamed mixture, beating until smooth.

Add the water and beat until thoroughly blended.

Pour into a greased and floured 9" x 9" baking pan and bake at 350 for 35 to 40 minutes.

Cut into squares and serve with whipped cream, lemon sauce or hot applesauce.
