RECIPE

Easy Beans and Rice
 
2 tablespoons vegetable oil

One small to medium-sized onion, chopped

2 tablespoons diced green chillies* (mild or hot, according to your taste)

2 cups of cooked Basmati rice

1- 1 lb. can aduki or other beans

1- 1 lb. can diced tomatoes

1 teaspoon chili powder

Salt and pepper to taste

In a large skillet, saute onion and chillies in oil for a few minutes.

Add rice, beans and diced tomatoes and heat through.

Season to taste.

* Diced green chillies are sold in jars and can usually be found in the Mexican food section of the grocery store.
