RECIPE

Greek White Sauce
 
¼ cup butter or margarine

1/3 cup all-purpose flour

1 ½ cups milk (can use soymilk)

3 eggs

salt to taste

dash of white pepper
Melt butter or margarine in medium saucepan.

Stir in flour and cook 1 to 2 minutes.

Gradually stir in milk.

Continue stirring until slightly thickened.

In a small bowl, beat together eggs, salt and white pepper.

Stir in about ¼ cup hot milk mixture.

Stir egg mixture into remaining milk mixture.

Stirring constantly, cook until thickened (this will not take long.)
