RECIPE

Easy Kidney Bean Stew
 
2 large potatoes, peeled and diced

1 cup of sliced fresh carrots

1 cup of celery diced

1 small onion, chopped

3 tablespoons of vegetable oil

1 or 2 dry bay leaves

1 Tablespoon tomato paste

2 cups water

1 teaspoon each of oregano, thyme and salt

3 cups of cooked kidney beans

 

Saute potato, celery, carrots and onion in oil.

Add bay leaf, tomato paste, water, and seasonings.

Bring to a boil, cover and simmer for about 30 minutes.

Remove bay leaves, add beans and heat through.
