RECIPE

MUSHROOM AND GREEN BEAN CASSEROLE
 
1 lb. fresh green beans

1 cup green and/or red bell pepper, diced

1½ cups chopped onion

 ½ cup canola oil

1 pkg. Morningstar Farms Recipe Crumbles

12 oz. mushrooms, finely chopped

2½ cups vegetarian gravy or 1 can cream of mushroom soup plus ½ can water

3 tablespoons maple syrup

Generous splash of soy sauce

½ cup lemon juice concentrate

dash of cayenne pepper

1 6 oz. can French fried onion rings.

Wash, trim and lightly cook green beans in boiling water.

Sauté onion and pepper in oil. Add gravy, M F Recipe Crumbles, mushrooms, maple syrup, soy sauce, lemon juice concentrate and pepper.

Cook over low heat for approximately 15 minutes.

Put green beans in large casserole dish.

Pour gravy and vegetable mixture over green beans.

Add one half of the French fried onions and thoroughly combine all.

Sprinkle rest of onions over top of casserole.

Bake in 350 oven until casserole is bubbly and onions are browned (approximately ½ hour)
