Carina's Oat-Nut Patties
 
One cup rolled oats (quick oats are fine)

1 cup finely chopped walnuts

1/2 cup nutritional yeast flakes

1 medium onion, peeled and finely chopped

2 stalks celery, finely chopped, including  any leaves

2 medium carrots, grated

1/4 cup whole wheat flour or unbleached 
white flour

2 tablespoons vegetable broth powder 
(salt-free)

1 tsp. sea salt, or to taste

ground black pepper, to taste

1/2 to 1 cup warm water

1 slice whole wheat bread, crumbled 
(optional)

canola oil for frying

Mix all ingredients except water and bread crumbs in a large bowl with a wooden spoon.

Mix in 1/2 cup of the water.

If mixture is too dry, add a little more water at a time until right consistency is achieved.

If mixture is too moist to shape into patties, mix in as much bread crumbs as needed. 

Heat 2 tablespoons oil in a heavy-bottomed skillet over medium-high heat.

Wash hands thoroughly, then shape mixture into eight medium-sized balls. 

Flatten to shape into patties. 

Place approximately 4 patties in the hot oil and fry for 2-3 minutes on each side or until golden brown. 

You may want to continue flattening with spatula as they cook. 

Drain on paper towels. 

Serve immediately with your favorite condiments or transfer to a baking sheet and keep warm in 300 F oven until ready for serving. Makes eight patties.
