Orange-Almond Cookies
For those of you who have been using Cornucopia Baking Mix, here’s a new cookie recipe that’s getting rave reviews.  
2 ½ cups baking mix

¾ cups of butter or non-dairy spread

Grated peel of one medium-sized orange

Juice of one medium-sized orange

¾ cups slivered almonds

2-4 tablespoons of water  

Mix baking mix before measuring. 

Thoroughly combine baking mix, butter or spread, orange peel and orange juice.  

Add water one tablespoon at a time as needed to make a thoroughly moistened dough. 

Fold in slivered almonds.  

Drop by rounded tablespoons onto  greased cookie sheet.  

Flatten slightly with a fork.  

Bake at 375 degrees for 12-15 minutes or until just beginning to brown on top.  

Let cool for several minutes and remove from pan.
