Quick Energy Bars
 
2 tablespoons butter or margarine

1/4 cup all natural fruit spread

1/4 cup unsweetened apple juice concentrate

1/2 cup honey

1 1/2 cups chopped walnuts

2 teaspoons ground cinnamon

1 teaspoon vanilla

1/8 teaspoon salt

1/2 cup raisins or chopped , pitted prunes or dates

2 cups rolled oats
In a heavy 3-quart pan, combine butter fruit spread, apple juice concentrate and honey.

Cook over low heat, stirring constantly, just until mixture begins to boil.

Remove from heat.

Add walnuts, cinnamon, vanilla and salt; stir until blended.

Stir in raisins and oats and mix until well coated.

Turn mixture into a well buttered 8 or 9 inch square pan.

With a buttered spatula, firmly press mixture into an even layer.

Let cool until mixture begins to firm up (about 20 minutes).

Cut into bars and let cool thoroughly.

Store airtight at room temperature. Makes 16 bars.
