RECIPE

Raita (Yogurt Salad)
A nice cool addition to a spicy Indian Cuisine
1 quart low-fat or fat-free plain yogurt

3/4 cup raisins

1/2 cup walnut pieces coarsely chopped

1 medium to large cucumber

1/4 cup chopped, fresh mint leaves

1 tablespoon honey

Freshly ground black pepper
Drain any standing liquid from yogurt.

Peel cucumber, cut into quarters lengthwise. Scrape out seeds and cut into 1/2 inch pieces.

Combine yogurt, raisins, walnuts, cucumber, honey and chopped mint leaves.

Let cool in refrigerator.

Just before serving, sprinkle liberally with fresh ground pepper.
