RECIPE

Tangy Fresh Tomato Soup
 
1 pound tomatoes, chopped

1 ½ teaspoons dry basil

1 cup whole wheat bread crumbs

3 Tablespoons extra-virgin olive oil

2 tablespoons lemon juice

1 tablespoon tomato paste

½ teaspoon ground ginger

¼ teaspoon cayenne pepper

1 teaspoon salt (optional)

Pepper to taste

½ to 1 cup vegetable juice or water

Put all ingredients in a food processor or blender and blend until smooth, adding vegetable juice or water, according to desired thickness.

A good chilled soup but may also be served hot.

3-4 servings.
