RECIPE

Vegetable Frittata
(Not for those who are watching their cholesterol)
2 tablespoons olive oil

1 small onion, chopped

1 clove garlic, minced

2 large carrots, diced

2 small or one large
zucchini, coarsely chopped

1 cup grated parmesan cheese

6 eggs

1/8 teaspoon pepper

¼ teaspoon dry basil

¼ teaspoon oregano
Heat oil in frying pan over medium heat.

Add onion, garlic, carrots and zucchini.

Cook and stir about five minutes.

Beat eggs lightly with pepper, basil and oregano.

Stir in cheese and vegetables.

Pour into greased 9 inch pie pan.

Bake at 350 degrees for 25-30 minutes until puffed and browned.
