RECIPE

Vegetarian Chili
 
1 large onion chopped

2 cloves of garlic- average size

2 4 oz cans chopped green chiis (undrained)

2 cups of Italian style diced tomatoes

1 teaspoon sea salt

2 teaspoons dried oregano

2 teaspoons cumin

2 ½ teaspoons chili powder

approximately 60 oz. of canned chili beans (can mix light and dark)

5 cups of vegetable juice, like V-8

1 cup chopped red or green bell peppers

1 cup chopped mushrooms

1 10 oz.

1 box of frozen corn

Sauté onion and garlic until soft.

Add peppers and mushrooms and cook a little longer.

Put in pot with rest of ingredients and cook about 45 minutes or about 4 hours in crock pot.

Add corn shortly before serving and continue cooking until corn is heated through.
