RECIPE

VEGETARIAN GRAVY (1 cup)
 
1 tablespoon oil

2 tablespoons flour - any kind

1 cup vegetable broth or
drippings from sautéed vegetables

  Splash of soy sauce

  Dash of nutmeg

  Salt and pepper to taste

 

Heat oil over medium heat.

Add flour and stir until a paste is formed.

Add vegetable broth, soy sauce, nutmeg, salt and pepper.

Continue heating until thickened.

Recipe may be doubled, tripled, etc.
If you don’t always have vegetable broth or drippings handy, broth can easily be made from powdered vegetable base and boiling water. The brand I use is Vogue Vege Base. It works very well in a number of my favorite recipes, goes a long way and has the added advantage of being low in sodium.
