RECIPE

Zucchini Walnut Bread
(a rich and very moist zucchini bread)
½ cup applesauce

1 cup olive oil

2 cups shredded, raw zucchini

1 ¾ cups raw sugar or Sucanat

2 cups flour

¼ Tablespoon baking powder

2 teaspoons baking soda

2 teaspoons cinnamon

1 teaspoon salt

2 teaspoons vanilla

1 cup chopped walnuts
Put zucchini in strainer and press or squeeze liguid out.

Beat applesauce, sugar and oil together with electric mixer or in food processor.

Add flour, baking powder, soda, cinnamon, salt, vanilla and nuts.

Mix together by hand.

Add zucchini (minus liquid). Beat mixture.

Pour into 2 greased, floured loaf pans (2 lb.).

Bake one hour at 350 degrees.

Recipe may be doubled.
