The most famous wine of the
region is Lambrusco. One of the oldest wines of Italy, and perhaps
the oldest grape, cultivated originally by the Etruscans. The
Ceci family estate was developed in 1938. They are traditional
producers, and vinify a range of different Lambrusco and Malvasia
wines.
Lambrusco can be produced as a rosato (rose), secco, (dry), amabile,
(semi-dry) or dolce (sweet). The traditional way of making Lambrusco
is for the wine to go through a secondary fermentation, as Charmat
method. It is a classic Italian wine and produced as a dry wine.
It has a full lush sparkling body that goes well with a range
of foods.
The grapes are picked the first week of October. Vinification takes place with the maceration of the grapes on the skins to obtain a wine rich in color and body.
After a gentle pressing of
the grapes the must is repeatedly pumped over to extract the most
possible color and body. The wine goes through a natural fermentation.
It is then left to rest until December or January. This process
allows the wine to filter naturally from impure substances. The
wine is then put into temperature controlled tanks where a secondary
fermentation takes place for about 1-2 months. A process of sterile
filtration takes place after the fermentation is completed and
then the wine is botted.
