SPINACH CALZONES
Take one loaf's worth of bread dough. Divide into 4-6 pieces (depends on how large you like them.) Prepare filling by mixing well:
- 10 oz frozen chopped spinach, thawed and completely drained
- 8 oz part skim ricotta cheese
- 2 cloves garlic, minced
- 1 egg
- 1 Tbsp grated Parmesan
Roll out each piece of dough on a floured board until about 1/4" thick. Place about 1/4 cup of filling in the center of the dough. Fold dough over top and crimp down with a fork. Place calzones on a greased baking sheet. Bake at 400 degrees for 15-20 minutes or until golden brown. Serve with tomato sauce on the side.
