1 bag large tortilla chips (round or triangular shaped)
1/2 cup shredded cheddar cheese
1/2 cup shredded pepper jack cheese
1 can refried beans
1 jar sliced jalapeños, drained
1 pound lean ground beef
1/4 cup onion, diced
1 envelope taco seasoning
1 pint sour cream (real or fake)
Directions:
Prepare ground beef and taco seasoning according to package directions. Be sure to drain off as much grease as possible when browning the meat!
Meanwhile, put tortilla chips on a large microwave-safe platter. Sprinkle with meat mixture. Dab on refried beans. Sprinkle on cheeses, onion, and jalapeños.
Microwave at medium (50% power) about 2 minutes. Watch carefully Microwave just until the cheeses loose shape and start to run together and nachos are steaming.
Carefully remove from microwave. Let stand one minute and serve with sour cream on the side. Plate will be HOT!
