Hop Rocket Ale

Imperial IPA by Dave Reaser

5 gal  OG:  1.075  FG:  1.018   IBU:  100+
Grains:  Pilsner Malt  15 lb
              Biscuit Malt    1 lb
              Special B      .25 lb
Mash at 149 for 90 min and 168 for 10 min and Boil for 90 min
Hops:  Add 5.3 grams of Amarillo, 1.5 grams of Simcoe and 1.25 grams of Warrior every 7 minutes of the boil starting at the start of the boil right to the end of boil.  Dry hop in the secondary with 1 oz of Amarillo and .5 oz of Simcoe and .5 oz of Warrior
Ferment:  7 days in Primary @ 68 degrees and 12 days in secondary @ 68 degrees
Yeast:  Wyeast 1099 - Whitebread
 
 

As close to 90 minute IPA as I ever got.
