Big Ass Barley Wine

by Lewis Ave Brewery  2004 edition

OG:  1.103  IBU:  100 +  SRM:  16   6 gallons
 
Grains:  Pale Malt  15 lb.
              Crystal 60L   2 lb.
              Crystal 10L   2 lb.
              Cara Pils        2 lb.
Mash at 104 for 30 minutes,  144 for 30 minutes, and 154 for 60 minutes.  Mash out 168 and sparge 170.
Boil for 90 minutes.
Hops:   1.5 oz  Chinook for 60 minutes
             1.5 oz Chinook for 45 minutes
             1.5 oz Centenial for 30 minutes
             1.5 oz Centenial for 15 minutes
              1 oz   Cascade for 15 minutes 
              2 oz   Cascade for dry hopping
Yeast:   White Labs WLP099 Super High Gravity
 
Ferment down and let mature for months or a year
 
 

This beer keeps improving with age. One bottle of 2004 edition is left and waiting for Christmass 2006
