Stuffed Meat Loaf Roll

1 lb    ground beef  
1   egg  
1   slice lc bread(crumbled into soft bread crumbs)  
2 Tbs    lc catsup  
2 Tbs    calorie countdown milk  
1/4 tsp    salt  
1/4 cup    grated parmesan cheese  
8   black olives (chopped)  
1   small stalk celery (chopped)  
1   green onion (chopped)  
6   slices cooked bacon (chopped)  
1 tsp    salt  
1/2   package (5 ounces) frozen veggies  
1/4 cup    shredded Cheddar cheese  
4   slices american cheese  
 
1 Rinse frozen veggies under cold water and set aside to drain.
2 Mix first 10 ingredients in a large bowl until they are well incorporated.
3 On a piece of aluminum foil, pat the ground beef mixture into a 10 x 12 rectangle.
4 Arrange the veggie on the rectangle within 1/2 inch of the edge.
5 Sprinkle on the cheddar cheese and bacon.
6 Roll up the rectangle carefully using the foil to lift.
7 Press edges and ends to seal the roll.
8 Place on a rack in a shallow roasting pan.
9 Cook uncovered in a 350 degree oven for 50 to 60 minutes.
10 For the last minute, place overlapping cheese slices on top of roll and return to oven
11 until melted..(about 1 min)
