your choice of chicken parts, approx. 2 lbs. 1 stick melted butter 1/2 c. dried LC bread crumbs 3/4 c. Parmesan
cheese 4 green onions 4 sprigs fresh Italian parsley 4 sprigs fresh thyme 1 sprig fresh chives 2 large eggs Salt
& pepper to taste
Grind bread crumbs, parmesan cheese, green onions, Italian parsley, thyme, and chives
in a small food processor to a fine mill. Then transfer to a dish and salt and pepper to taste. Mix melted butter and
eggs in a separate dish.
Dip chicken in melted butter and eggs to soak and then coat with the bread crumb mixture.
Place on baking sheet and bake 50 minutes in a 350 oven. Turn once half way through.
These count out to about
2 carb each assuming 6 pieces of chicken.
