Two
of Patti's truffle recipes recently won awards at the 2007 Rehoboth Beach Chocolate Festival. Her Hidden Almond Truffles received Third Prize and her Strawberry Truffles with
balsamic vinegar and black pepper won First Prize for candy in the Professional/Chef competition. Patti's Strawberry
Truffles were then honored with the Grand Prize for the BEST chocolates made by a professional!
The quality of the ingredients
in Patti's truffles lingers in your mouth even after the chocolate
is gone. Some flavors are bold, others deep and subtle, but all complement chocolate’s rich
complexity. Patti uses real food, like freshly ground coffee, fruits and fruit juices,
fine liqueurs, toasted coconut, herbs and spices to flavor her truffles — ingredients you use at home, not industrialized,
processed additives. Local ingredients, like Lewes Dairy cream, butter from Chesapeake Bay Farms in Berlin, Dean's Honey, ripe strawberries picked at Provident Organic Farm in Bivalve and Oakley's Farm and Market in Hebron, blueberries from the Garden of Eden, and even Rehoboth Beach's Dogfish Head Brewery beer, are used whenever possible.

Bittersweet chocolate (cocoa liquor,
sugar, cocoa butter, milk fat, soy lecithin, vanilla), cream and butter.
Notice
what is not in them: preservatives, artificial flavors, trans fats, or excessive sweeteners.
Contrast
this to comparably priced, world renowned brand “Gdv” truffles:
Bittersweet
chocolate (sugar, chocolate, cocoa
butter, cocoa, butter oil, soya lecithin–an emulsifier, milk,

Like many
